We make bread with the pan too.... moreOct 20, 2009  細時到傍晚聞到陣陣抄菜香味，今日已不復聞。究原因是因為今日冇靚鼓油。以前抄菜一讚鼓油陣香味立刻吸引你歸家食飯。要追回童年思憶唯有尋找家鄉靚鼓油。 鼓油基本上是用黃豆發酵制造。上等鼓油有濃郁的豆香而少鹹味。市面上有些低鹽鼓油只是淡些，另外加些人做味素。要有上好的鼓油的鹽度是不可高也不可低。為何？因為適中鹽度限制了可以可生長的細菌種頪。鹽度已決定了成品的香味。 發酵日子夠了，提取頭一次頭油，為之頭抽。再加水發第二次酵，如此類推。頭抽豆味最濃。要食得健康又好味，當然首選頭抽。因為頭抽豆味夠濃，... more
